The {food}

i've had many ask for the recipes i try for my classes
so i thought i'd share them here.
all these are quilters approved!!!
and as a side note...if it's not easy, i don't make it.

Baked Beans

are a great gift for any man.



my favorite recipe is one that came from my mom.
(i've tweaked it a bit, and i've never really measured, so these are approx. measurements)

1 lrg. can of bush's baked beans
1 can each of pinto beans, kidney beans, black beans and white beans (drained)
1 package bacon (cooked and crumbled)
1/2 of a sweet onion (cooked with the bacon)
1/2 cup of your favorite bbq sauce
1/4 cup ketchup
1/4 cup brown sugar
cap full of vinegar
1 Tbls of dry mustard

i simmer it in a slow cooker for a few hours and it's delicious.
always a favorite.

Not much Christmas

goin' on around here. we are in the process of moving {finally}... at first i was opposed to the idea of moving right before christmas, but when it became an option, the thought of having christmas in a new home with happy, happy kiddos, made my heart happy and i new we had to do it. poor shawn is soooo busy painting the bedrooms, but they look super good! i've been packing, unpacking, packing, unpacking... the carpet comes in tuesday and then we can move the furniture in. so as for christmas decorating, well...there isn't any YET! although, i did get this stinkin' cute gift from a dear friend that i LOVE.
and we had our quilt class christmas party friday night. we each made a smallish quilt for the person who's name we drew. i scored a fabulous gift that i will share with you as soon as i find the memory card to my camera :) and the gift i made was the christmas presents quilt {showed in the previous post}. it's one of cheri's designs, of course! i had fun making my person her gift. i LOVE my person!
the food was delicous as usual and i would love to share a spectacular corn dip recipe with you if the other person that i LOVE wouldn't mind letting me...

Pumpkin Bread

i made mini pumpkin bread loaves for class today and thought i'd share the recipe



pumpkin bread

ingredients:

3 cups sugar
1 cup veg. oil
4 eggs
2/3 cup water
1 {15} oz. can of pumpkin
2 tsp. ground ginger
1 tsp. ground allspice
1 tsp. cinnamon
1 tsp. ground cloves
3 1/2 cups flour
2 tsps. baking soda
1 1/2 tsp. salt
1/2 tsp. baking powder

directions:

preheat oven to 350. lightly grease {2} loaf pans or {6} mini loaf pans

combine sugar, oil & eggs and beat until smooth. add water and beat until well blended. stir in pumpkin, and spices.

combine flour, soda, salt and baking powder. add dry ingredients to pumpkin mixture and blend just until all ingredients are mixed. divide batter between prepared pans.

bake at 350 for about 1 hour. {about 40 min. for mini loaves}

Pretty in Pink




bringing dinner to a family with a new baby?
send a pot pie in a pink bakery box and a yummy treat in a box bought from garnish.
tied up with a pretty pink bow, and it's perfect for the parents of a sweet baby girl...

Quick & Yummy Chicken Pot Pie

1 Pkg Pillsbury Pie Crust
4 cups cubed cooked chicken
16 oz. cooked mixed veggies
1/3 cup butter
1 1/3 cup chicken broth
1/3 cup chopped onion
2/3 cup milk
1/3 cup flour
½ tsp salt
¼ tsp pepper


Melt butter and add onions. Cook until tender. Add flour, salt, pepper, chicken broth, milk and cook over med heat until thick. Remove from heat and add chicken and veggies. Spread crust in pie plate, poke the bottom of the crust and cook for a few minutes. Add chicken mixture and cover with top crust. Flute edges and cut away excess dough. Use the excess dough to cut out a cute shape for center of pie. Cover edges with foil and bake pie for 35 min. at 425*.

Pumpkin Bars



Pumpkin Bars

Combine the following:
2 cups flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt

In a large bowl, beat together:
4 eggs
1 - 15 oz pumpkin
1 2/3 cup sugar
1 cup canola oil

stir in dry goods

put in ungreased pan ( i use a jelly roll pan 15 x 10 x 1)
bake at 350 for 25-30 min.

Cream Cheese Frosting
3 oz. cream cheese
1/4 cup butter
1 tsp vanilla
2 cups powdered sugar
this recipe was given to me by a beautiful and talented friend of mine.

and as much as i LOVE mondays bakin' and cookin' my diet is not going so well. so i'll have to come up with an alternative to the delicious treats...

A New Breakfast Favorite

i'm signed up to recieve the daily dish from allrecipes
this morning i recieved the recipe for peanut butter and banana french toast.
i knew shawn would love it, so i gave it a shot.
it is a new breakfast favorite...


1 egg
1 dash vanilla extract
2 tablespoons creamy peanut butter
2 slices bread
1 small banana, sliced
2 tablespoons butter

Directions:
In a small bowl, lightly beat the egg and vanilla together.
Spread 1 tablespoon of peanut butter on top of each slice of bread. Place the banana slices on top of one of the slices of bread. Place the other slice of bread on top of the first, to make a peanut butter and banana sandwich.
In a skillet or frying pan, melt the butter over medium heat. Dip the sandwich into the egg mixture and place in the heated skillet. Sprinkle sugar and cinnamon on top. Cook until brown on both sides. Serve hot. (serves 1)

i {heart} my pancake pen!!!

i got a chance to try out the pancake pen this morning!



i was having so much fun making hearts, that i almost made the kids late for school :0



i made a big 'ol 'G' for gavin, but broke it
and gavin spelled my name but i ate it before taking a picture...
if you like pancakes, you gotta get a pen!

here's our family's favorite pancake & homemade syrup recipe.

Yummy Pancakes!

Ingredients:

1 1/2 c. milk
1/4 c. vinegar
2 c. flour
1/4 c. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
1/4 c. melted butter

combine milk & vinegar and set aside for 5 min. to {sour}

combine flour, sugar, baking soda, baking powder, and salt in bowl.
whisk eggs & butter into {soured} milk.
pour flour mixture into wet ingredients and whisk until al the lumps are gone.



Delicious Buttermilk Syrup!!!
(never buy syrup again)

1 c. sugar
1 c. butter
1/2 c. buttermilk
1/2 tsp. baking soda
1 Tbs. light corn syrup
1 tsp. vanilla

combine the first 5 ingredients and boil for 5 min. Remove from heat add vanilla. stir and serve warm!

A Recipe Book

that is WAAYYY too CuTe!!!



my sister pointed me in the direction of a fabulous, new to me, blog and i just had to share this recipe book.
click here to visit michelle at mish mash and see her cute recipe book. she even has a recipe that sounds delicious, although given the fact that i've been baking cupcakes, cookies and banana chocolate chip bread, i don't think i'll be trying it anytime soon. i need to give my waistline a break! i will however bookmark it and maybe i'll even make myself a cute recipe book like this one...

sure...in my spare time.
a girl can dream right!!!

{hmmm, i just had a thought...}
what a great gift it would make.
kenz...my birthday is in november. that gives you plenty of time!
i promise to not even ask what happened to all my recipes during the move ;)

Third times the CHARM


trina had this recipe on her blog and sharyn raved about them so i had to give them a try.

the first couple times they were good. the kids LOVED them, but they weren't as sharyn had raved. i was bummed because i had brought them to the birthday party and i know they weren't living up to their potential, so i tried yet again...

this time i googled it and found the recipe here at allrecipes (love that site!). i read the reviews and tips and tried yet again.

can i just say DELICIOUS!!!
the key is really to undercook the cupcake a tad. if you think they are perfect, they are probably too done.
if you want to wow the kids (and adults) give it a try.

Best EVER Tortilla Soup

a week or so ago, i was pleasantly surprised when a good friend stopped by with {6} pre-made meals from a group of dinner divas! i was grateful for their generosity! there is nothing better than having meals ready to go, especially when the last thing you want to do is cook! well there is something better...
when you find that the meal is DELICIOUS!!!


that's what we found when we cooked up a wonderful tortilla soup made by lisa! i thought i'd share her recipe with you.

Tortilla Soup Recipe
1/2 onion
1/2 tsp garlic minced
4 tsp cilantro chopped
1 tsp butter
30 oz chicken stock
1 sm can tomato sauce
1/2 pkg taco seasoning
1 can stewed tomatoes
1 can corn
1 Tbls worcestershire sauce
4 boneless/skinless chicken breasts
salt & pepper to taste
2 handfuls tortilla chips
1/2 can diced chilies
put all ingredients in crock pot and cook on low for 8 to 10 hours.
shred chicken with a fork before serving and garnish with additional chips, sour cream and cheese.
enjoy!

{and just as a side note...my kids devoured it!}

Berry Cobbler

for those of you who know me, you know that i don't like cooked fruit.
in fact, i haven't ever met a cobbler that i would eat.
but {as usual} there is an exception to just about everything
and this is it!

a delicious berry cobbler that is as easy to make as it is good!
a friend shared the recipe with me and i must share it with you.

Serving Others

is so much easier when you have a plan.
i have two meals that i make when i get the opportunity to bring a dinner to a family.

(i'd like to add that i take the easiest route when putting these together and often times that means ready made crust and frozen veggies...)

the first is a chicken pot pie, salad and banana bread.


chicken pot pie


1 pkg. of pillsbury pie crust
2-3 cups chicken breast (cooked and diced)
16 oz. cooked mixed veggies
1/3 cup butter
1 1/3 cup chicken broth
1/3 cup chopped onion
2/3 cup milk
1/3 cup flour
1/2 tsp. salt
1/4 tsp. pepper


melt butter & add onions until they are tender. add flour, salt, pepper, broth and milk and cook over med heat until thick. remove from heat and add chicken and veggies. spread crust in pie plate and add mixture. cover with top crust and flute edges (cut away excess dough) with excess dough roll and cut out a cute shape with cookie cutter. cover edges of pie crust with foil and bake at 425 for 35 min.


my notes: i always double this and make two. i only use pillsbury pie crusts, the others are yuck! i only use the bags of frozen skinless, boneless chicken breast tenders. (don't ask) i haven't always been too thrilled with my fluting and you might feel the same way. don't worry no one notices!

ok, so that's the first...

the second meal is just as easy. it's an enchilada casserole, spanish rice and a 'sante fe' salad.

enchilada casserole

16 oz. sour cream
16 oz. jar of salsa
1 can (10.75) cream of chicken soup
1/4 cup diced onion
6 (12") flour tortillas, cut into strips
6 boneless, skinless chicken breats cooked and shredded
4 cups shredded cheddar cheese

mix sour cream, salsa, cream of chicken soup and onion. layer the bottom of a 9 x 13 baking dish with 1/3 of the tortilla strips, 1/3 of the chicken, 1/3 of the mixture and 1/3 of the cheese. repeat layering with remaining ingredients. bake at 350 for 20-30 min. or until bubbly. enjoy!!!

i make spanish rice to serve with it. i got a great recipe here!
the salad is a pack called 'sante fe' salad.
it's pretty darn good.

and for a yummy treat make this canned corn casserole.

corn casserole

15 oz can drained whole kernel corn
15 oz. can creamed corn
1 box jiffy corn bread mix
1/2 cup sugar
2 eggs, well beaten
1 stick of margarine, melted
8 oz sour cream

mix all ingredients together in a bowl. pour into a well greased 9 x 13 baking dish. bake at 350 for 45 min. or until center is firm.

well that's it. i hope you weren't disappointed.
